Buranelli Essi biscuits recipe - Receta galletas italianas Buranelli


En mi último viaje al norte de Italia, probé las galletas más deliciosas de mi vida: Buranelli. Son típicas de la isla de Burano, Murano y Venecia.

Compramos  muchas y las disfrutamos en Italia mientras paseábamos por los bellos canales. También nos trajimos algunas a UK, y las he sacado solamente para contadas ocasiones. Como se imaginarán, ya se acabaron y heme obligada a tratar de igualar/ recrear la receta de la Nona….  Una imaginaria, pues reunir ingredientes, pasos y procedimiento de la receta me costó un mundo!

Para estas galletas necesitas:

- 350 gramos de harina sin polvos de hornear

-100 gramos de mantequilla (temperatura ambiente)

- 150 gramos de azúcar (fina para repostería)

- 4 yemas de huevos

- Dos cucharaditas de esencia de vainilla

- una pizca de sal.

- ralladura de limón.

Preparación:

Se baten las yemas solamente para homogeneizar. Poner la vainilla, más ralladura de limón.

En otro bol se agrega la harina cernida y el azúcar, la mantequilla, la sal y finalmente la mezcla de yemas. SE amasa todo con la mano hasta que quede suave, al mismo tiempo se siente una pasta dura y muy compacta.

SE deja en el refrigerador por 15 minutos envuelta en plástico de cocina (es más fácil trabajar cuando esta fría).

Se aplana con el uslero y se cortan las formas de las galletas. Tradicionalmente son en “S” y en “O”.

Hornear por 15 minutos. Luego almacenarlas sin que les llegue el aire. SE conservan muy bien por días y son ideales para untar en el té.

 * Algunas personas han sugerido ponerle una pizca de anís, otras más huevos…. En la fotografía yo tengo una galleta original artesanal de un paquete que trajimos de Italia y es MUCHO más amarillenta… Necesitará colorante amarillo para agarrar el tono?

La galletas son muy fidedignas a las originales, pero si algún ITALIANO lee esta receta, por favor comente! - Feliz! Ya  que estamos abiertos a mejora!

In my last trip to Italy I tried the most delicious biscuits of my life! Buranelli; typical from the islands of Burano, Murano and Venece.

We bought plenty and we enjoyed in Italy while strolling by the beautiful canals, but we also bought some more to bring to the UK; they have only  been eaten in special occasions, and as you can imagine, they are all over!

So, I have been forced to try ad recreate the recipe of the La Nona!  - and a very imaginary one, as it cost me a lot to gather the information!

Ingredients:

-          350 grams of flour (without baking powder)

-          150 grams of white caster sugar

-          100 grams of butter (room temperature)

-          4 egg yolks

-          2 sugar spoon of vanilla essence

-          A pinch of salt

-          Grated Lemon rind

 Preparation:

Put the egg yolks in a bowl, the vanilla and the grated lemon rind; stir gently.

In another bowl put the sift flour, the sugar, the butter, the salt. Pour in now the  egg yolk mix.

With the hands, mix it until you have a compact paste, but soft.

Wrap it with Clingfilm and leave it to rest for 15 minutes in the fridge.

Then roll it until you have a sheet of dough. Cut in “S” or “O”, which are the traditional shapes.

Bake them for 15 minutes, then let them cool and store in a hermetic container.

* Some people put a bit of anisette in the mix, some more eggs...

I have one biscuit left from a package we brought from Italy and the colour, as you can see in the picture is far more yellow. Do I need to put yellow colorant in it as well? If any Italian person read this, PLEASE send feedback, the recipe is open for improvement. Though, I have to say that they taste very trustworthy to the original. :D

  8. Dear Galla! Te digo que estás de suerte, porque la receta de etas galletas es UNICA! Y lejos son riquísimas, te duran caleta, para untar en el té… ricas. Debes guardarla en un recipiente hermético.
    Temperatura 170 – 180 grados… o sea, medio un poquito alto. Hasta que doren levemente, no TOSTADAS! D
